What I’ve Been Eating

Hi friend! Welcome to a fresh, new week! I’ve been getting lots of questions about what I’ve been eating and I’m sharing it all here today. I tend to be a creature of habit and will eat the same things on repeat until I get tired of it.

I always start my day with a cup of coffee and add 2 tablespoons of half and half. I usually have decaf coffee after that.

I usually eat 3 meals day and aim to get about 90 grams of protein a day. If I want a sweet treat after dinner, I’ll have my protein ice cream, ghirardelli chocolate squares or a decaf coffee with cold foam. That’s one of my favorite treats now. I still eat regular ice cream on occasion, but it’s few and far between now.

I try to meal prep as much as I can in advance so that all I have to do when it’s time to eat is assemble or reheat.

Most of these meals aren’t really recipes, but I did my best to break it down with ingredients and instructions in case you want to try to recreate them.

Bacon, Eggs, Toast & Spinach

My breakfast has been this egg breakfast most mornings. I never thought I would be eating veggies for breakfast, but I like knowing I’m getting in some greens first thing in the morning. I make sure to buy pasture raised eggs, they’re more expensive, but worth it to me. I also eat Sola (carb free) bread and Kerrygold butter. That butter is so delicious!

Fish Tacos

I love ordering fish tacos at a restaurant and if you make the slaw and add sriracha mayo, it tastes just like the restaurant version! I buy these low carb tortillas. Sometimes I add this wasabi sauce if I want it spicy. My friend Karen brought me herbs from her garden so I added them here.

Cod is a mild, flakey white fish, but you can use another variety or even shrimp. I use my air fryer often, for this too!

Chicken Drums

Elliott is so good at cooking meat. I honestly prefer his steak over any restaurant. He also makes great chicken drums. He makes them on the grill, in the air fryer or in the oven. This last batch was from the oven, so I provided those directions below. You can serve with carrots, celery and ranch if desired. We just ate them plain.

Salmon with Slaw & Green Beans

Often, I’ll just reassemble leftovers into a new dish so this is leftover slaw with salmon and leftover green beans.

For the green beans, I boil them until almost done, then cook them over medium heat with a bit of olive oil, garlic and salt and pepper. And, as you can see, I add sesame seeds to almost everything!

The salmon was cooked in the air fryer at 400 for about 10-13 minutes, then I added Soy Glaze and put the air fryer on broil for a few minutes.

Shrimp, Zucchini, Squash and Rice

Y’all the rice cooker has been a game changer for me! Perfectly cooked rice every time and you don’t have to babysit it!

I buy frozen, precooked shrimp (large, peeled with the tail off) so I just have to let it thaw, then reheat in a pan with garlic, and salt and pepper.

I cook the zucchini and squash the same way, just chop it into chunks and season with garlic, and salt and pepper. Cook in a pan over medium heat until fork tender.

Shrimp Fried Rice with Vegetables

This was the same meal as above, just tossed together and reheated in a pan with an egg. I added soy sauce for more flavor.

Steak, Brussels Sprouts and Mushrooms

Like I said, Elliott is the real meat chef here, but I’ll still attempt it when he’s not here. I use my cast iron pan, add a tablespoon of olive oil and cook the steak about 5 minutes on each side for medium rare. It’s important to let the steak rest about 10 minutes after cooking. My son likes his steak served on a plate that’s been heated in the microwave for a minute.

Cook the mushrooms over medium heat with olive oil and salt and pepper. You can add the same balsamic vinegar I use for the brussels sprouts for some zing.

Fruit

I try to eat a serving or two of fruit a day. It’s been delicious and satisfying this summer and also helps give me a sweet treat after a meal. I love strawberries, blueberries, watermelon, peaches, plums, bananas to name a few.

Protein Ice Cream

I use the Ninja Creami  to create a healthier version of ice cream at home. It’s amazing how creamy and delicious (and EASY) it is to use. You just have to make it in advance and have some on hand because the mixture needs to freeze for 24 hours before you can spin it into ice cream.

I hope this gives you a good idea of the kinds of things I’ve been eating. Since the beginning of June, I’ve lost 6 pounds and I feel so much better. It’s wild how much 6 pounds is and what a difference it can make.

Have a fantastic day friend!

  4. Okay I am intrigued. You are such a small person, how do you drop weight So easily (meaning 6lbs in 2 months, no that it was “easy”)

Do you calculate your tdee and ensure a deficit daily?

Are you eating according to macros. It’s so hard to lose the older you get ! I’m amazed by your progress! 🙌🙌

    1. Great questions Tara. I do know my BMR is about 1200 calories, so I tracked my macros and tried to eat about that amount each day. Tracking is the best way for me to really see results. I’ve stopped tracking now, but when I do, I see results. I also aimed for at least 90 grams of protein each day. It definitely feels like it’s so easy to gain and so hard to lose.

  5. To clarify, Sola bread is probably not carb free. It has negligible carbs and is lower in carb than most other breads out there. It is sugar free which is a great help to those watching their carbs. People with type one diabetes cannot really operate on the “net carb” rule of subtracting fiber from carbs. We must count every carb we ingest in order to get our insulin dosages correct.
You have great meal & snack ideas here!

  6. I never try protein ice cream, I must to try IT soon. Thanks for sharing all very helpful ideas!!!
