Hi friends! One good thing about a long weekend is a short work week! We’re almost to Friday already!
And then it’s just one.more.week of school for my kiddos! Are y’all already on Summer break? Our school started later this year, so that’s why they’re going into June this year. I know many of you homeschooled this year and my hat’s off to you! That is no easy task! PRAISE GOD for our teachers!!
6 QUICK HEALTHY SNACKS
Now let’s get to today’s post! When I shared my healthy meal prep, I got such great feedback, and the most asked question was, “what are your go-to healthy snacks?”
Today, I’m sharing what we reach for most often and they are also super yummy and so easy to make. In fact, most require no cooking at all, just some assembling!
Here are my favorite easy snacks: 1) Greek yogurt & berries, 2) popcorn & truffle salt, 3) crudite & hummus, 4) caramel rice cakes, 5) edamame, and 6) kale chips.
Greek Yogurt, Blueberries, Strawberries
This is probably the snack I’m eating most lately. I really like this Oikos Triple Zero Greek Yogurt because it’s only 100 calories, 0 fat, 15 grams of protein and 10 grams of carbs.
But, not only are the macros good, it’s really tasty! I like the vanilla flavor and amp it up with fresh strawberries and blueberries. I usually add two strawberries and a handful of blueberries.
Name that show! 😉
Skinny Pop Popcorn & Truffle Salt
Next up is something so simple, it really only requires opening a bag! This Skinny Pop popcorn is perfect for movie night and I like to top mine with a sprinkling of truffle salt!
If you like something crunchy, this is a great snack. And only 100 calories per bag.
Crudite with Hummus
When we got back from the pool this weekend, I put together a crudite tray with fresh bell peppers, celery, thin pretzels and hummus. I love seeing all the pretty colors and eating the rainbow helps you get more vitamins and nutrients into your diet.
For the hummus, Jordan loves the Pine Nut flavor, so that’s usually what I buy.
Of course, the kids mostly reached for the pretzels, but there’s still value in exposure!
Caramel Rice Cakes
Oh man, how can something that looks so plain and simple be so good?! Maybe it’s because I love caramel flavor, but these taste like dessert to me. I love the crunch and will just eat them without anything on them, but you could add toppings like nut butter and bananas.
Two caramel rice cakes have 110 calories, 22 grams of carbs, no fat, and 2 grams of protein.
Edamame
Oh man, I could eat a giant bowl of edamame every day! These are soy beans that come in a pod, but I like to buy them already shelled for convenience. These come frozen in a steamable bag, so you only have to microwave them.
When they’re done, just add salt or the Everything Bagel seasoning. It’s delicious and gives you something tiny to eat with your hands, so you feel like you’re eating more than you are.
A half cup of shelled edamame has 90 calories, 10 grams of carbs, 2.5 fat grams and 7 grams of protein.

Kale Chips
Kale Chips are so easy to easy to make at home. I simply spray with cooking spray, season with salt and pop them in the oven at 350 degrees for about 8-10 minutes. They come out so crispy and flavorful!
If you prefer to simply open a bag, these come ready made.
Apples or Celery & Natural Peanut Butter
Another snack we eat often here is apples and celery with natural peanut butter. It definitely satisfies my sweet tooth and the kids love it too!
