Homemade Chocolate Covered Toffee (EASY) & Christmas Treats

Hi friend!  How’s your week going?  Can you believe we’re so close to Christmas?  My shopping is pretty much done, so I’m feeling good about that!  How about you?
I hope you brought your appetite today because I have one of my favorite, SUPER EASY homemade dessert recipes to share with you!  I’ve been making this chocolate covered toffee for years, but I usually only make it in December, so it’s a special treat!
It’s nearly foolproof to make, but it looks fancy, so people are always impressed when you tell them it’s homemade.  And it’s DELICIOUS!!  I have a hard time just eating a few at a time.
This toffee recipe requires only a few ingredients that you probably already have on hand.  If you’re missing something, it’s always convenient to have your Walmart+ membership to rely on.

THE EASIEST TOFFEE

Note:  I’ve made this toffee with and without a candy thermometer and they have both turned out great.  The toffee is supposed to cook to 300 degrees, which is helpful to see on the thermometer, but if you don’t have one, you can eyeball it.  I accidentally overcooked this one to 385 degrees and it was still delicious!

If you don’t have a candy thermometer, you’ll know the toffee is done cooking when it resembles the shade of peanut butter.

INGREDIENTS

Sugar – 1 1/4 cup
Light Corn Syrup – 1/3 cup
Water – 1/3 cup
Unsalted Butter – 2 sticks sliced
Salt – 1 teaspoon
Baking Soda – 1/2 teaspoon
Chocolate Chips – 1 cup (I prefer dark chocolate)
Sliced or Chopped Almonds – optional, 1 cup or as much or little as you want

DIRECTIONS

Using a deep saucepan, add the corn syrup and water over medium high heat until boiling.

Boil for about 5 minutes.

Add the butter and continue cooking until temperature reaches 285-300 degrees or turns the color of creamy peanut butter.  It takes about 20-30 minutes to reach this point.

Remove from heat, add the salt and baking soda and stir.
Pour the toffee onto a baking sheet and spread evenly with a spatula.  It hardens quickly so work fast.
Melt the chocolate in the microwave for 30 seconds and then pour onto the toffee and spread evenly.  Or, since the toffee is hot enough to melt the chips, you can just drop them onto the toffee unmelted.
Top with chopped/sliced almonds before the chocolate cools.
Put in refrigerator to set for about 30 minutes.
Break into chunks and enjoy!
These are the simple ingredients you’ll need, starting with the water, sugar and corn syrup.
After the mixtures starts boiling, you add the two sticks of butter.
Then you wait.  It takes about 25-30 minutes for the toffee to become the color of peanut butter, or reach 285-300 degrees.
I actually way overcooked mine to 385 degrees this time because I got distracted, but it was still so yummy!  I was worried I’d ruined it, but nope!  I’d say, it’s better to overcook than undercook.
Then, turn off the heat and add the salt and baking soda.  When you stir it, it will become fluffy like marshmallow fluff.
Pour the hot toffee onto a baking sheet and spread with a spatula into an even layer.  It’s really hot, so don’t touch it with your fingers!
Next, add chocolate chips on top and spread into an even layer.  You can pre-melt the chocolate chips, or let them melt directly onto the hot toffee.
Before the chocolate has hardened, add your sliced/chopped almonds.  If you use whole almonds, just put them in a ziplock bag and crush them with a meat mallet.
Put the pan in the refrigerator to harden and cool.
Finally, break the toffee into chunks. I just do this with my hand because I like the homemade look instead of being in perfect pieces.
I swear, this toffee is so good!  You could put it in a mason jar with a ribbon and give it as a homemade gift too!  We served it at the Favorite Things party and it was a hit!
I usually store any leftovers in the fridge and it’s good for about a week- although it never lasts that long!

Christmas Treats

I also ordered some pre-made Christmas treats to have at our Favorite Things party, the Peppermint Bark is so yummy.  I also scored on the Starbucks Mugs & Hot Cocoa Set which were only $5 for both the full-sized mug and hot cocoa.  Those make great little gifts for teachers too.

For our mail/package delivery folks, I ordered this candy bar set (& this one) of full-sized candy bars since that’s what they seemed to like best in years’ past.

I usually make a homemade coffee cake on Christmas morning, but it’s pretty time intensive, so I’m trying this Cinnamon Swirl Crumb Cake.  It’s by Krusteaz, which is the brand of pancakes we love.

Also, Jordan loves these Frosted Sugar Cookies and we can put them in these Treat Bags to give to her classmates.  #easypeasy

I’ve never had good luck making my own sugar cookies, so we buy this Sugar Cookie Mix & Icing and it’s so much easier!  Tip: put the shaped cookies in the fridge to firm up before baking.  It helps them spread less.
