The Easiest Lasagna Recipe

Hi friend!  Welcome to a brand new week!  We had a wild weekend, jam packed with fun stuff, but it also takes a lot out of you! We had a Saturday morning Soccer game, then spent the day at Dewberry Farms where we walked over 10,000 steps!  On Sunday, it was off to church and then Brian and I got dressed up for a fundraising dinner last night!

I feel like I need a weekend from my weekend!  You ever feel that way?!

THE EASIEST LASAGNA

Last week, after school, Jordan asked if we could have lasagna for dinner.  I didn’t have the ingredients on hand, but I knew I could order them online with my Walmart+ membership and have them the same or next day.

I’ve been using this lasagna recipe for years and it’s so delicious, but also really easy to make.  I buy no boil lasagna noodles so I don’t have to bother with the time it takes to boil them, not to mention the problems with them sticking together!

This lasagna recipe serves a crowd and everyone always raves about it!  You can make it up to two days ahead of time and refrigerate it until you’re ready to bake it.  You can also freeze it, then pull out to defrost and bake as directed.

INGREDIENTS

1/2 box Barilla oven ready lasagna noodles

2 jars Barilla Marinara Sauce

1 pound bulk Italian sausage or ground beef, cooked and drained

1 15-oz container ricotta cheese

4 cups (16-oz) shredded mozzarella cheese

1/2 cup (2-oz) Parmesan cheese shredded

2 eggs lightly beaten

I’ve been ordering my groceries online and it keeps me from making those impulse purchases that tend to happen when you’re inside the store.  How did those Dots pretzels jump into my online cart though??!!

RECIPE

  1. Pre-heat oven to 375 degrees F. In a large skillet, heat olive oil and brown meat until cooked through, season with salt and pepper.
  2. In a bowl, combine ricotta, 2 cups mozzarella, and parmesan cheese, Stir well.
  3. Spray a 13 x 9 inch baking dish with non-stick cooking spray. Pour one cup of sauce on the bottom of the dish; spread evenly. Place 3 sheets of Barilla’s no boil lasagna noodles side by side (sheets will expand while baking to the ends of the dish).
  4. Pour 1 cup of sauce and 3/4 cup of cheese mixture on the first layer. Top with 1/4 cup mozzarella and 1/3 cup of the cooked meat. Repeat for more layers.
  5. For the final layer, top with 3 lasagna sheets, add remaining sauce and top with cheese mixture and mozzarella.
  6. Cover with foil and bake for 25 minutes. Remove foil and bake additional 5 minutes to brown the cheese. Let rest 15 minutes before serving.

I like to use one pound of ground beef and a half pound of Italian sausage so you get the complex flavors from both.

Use a spatula to break the meat into little bits so there’s no huge chunks.

I like to add two jars of sauce because I feel like it reheats better this way and there’s plenty of sauce so the lasagna never tastes dry.

Stir until the sauce and meat is incorporated.

Next it’s time to mix the egg and cheeses.

I feel like more is more here, so you can add more cheese if you like.

Then, comes the fun part, assembling the lasagna.

I spray aluminum foil with cooking spray so that it doesn’t stick to the cheese, cover the whole thing tightly and cook at 375 degrees for about 25 minutes.

When the timer is up, I remove the foil and set the oven to broil for about 5 minutes so the cheese gets all toasty.

In she goes!

When you pull it out of the oven, it’s bubbly goodness and smells amazing!  It’s best to let the lasagna rest for about 20 minutes so the sauce comes together and it’s not boiling hot.

For Jordan, I cut it up into bite sized chunks and she devoured it!

I also love this dish because it reheats so well in the microwave and with our little bunch, we have leftovers for days!

    This looks lovely (it’s pasta – how could it not?! 😉), but I would highly encourage people to make lasagne (note the ‘e’ rather than an ‘a’) with a traditional béchamel instead of the cheese and egg mixture. It is honestly just as easy to whip up a quick sauce using just one pan rather than the bowl here and the result is just SO much better!

          Yep! I use mine all the time! I only wish it also came in a smaller size, but the size they have is perfect for most dishes!

    Looks delicious, and so easy! Last year, our Christmas Eve dinner was lasagna (a treat to ourselves since we didn’t get with family), I just might make this recipe this year if we can convince my grandma not to cook! 🙂

    I make a recipe similar to this as well- but we sub cottage cheese for ricotta- and add a lot more seasonings to it. Be very cautious putting a glass pyrex dish under the broiler- forget about it for too long and you could have a mess on your hands! (mine exploded!)

    Never made lasagna. This looks great. I ran out to the store and What are the eggs for? I didn’t see that part in the recipe. Oh well. Mine is in the oven as we speak. I’ll let you know how it turns out.
