Healthy Savory Breakfast & Tex Mex Burrito Bowl

Hi friends!  Happy weekend! Can you believe we’re almost to March?!  We’re celebrating Jordan’s birthday today (a week late) and we’ll be celebrating James’ birthday next week.  I can’t believe he’s about to be 11!  He’s growing into such a young man, and he’s almost the same size as me!

This week has been such a blessing to be able to return to some semblance of normal.  The kids went back to school on Monday and we were so thankful that they were able to.  I got my house cleaned up and even got a car wash, which was badly needed.  A clean car feels so good!  Next, I should clean out my purse to make it a tidy trifecta!

After we lost power, unfortunately we had to throw out most of the contents of our fridge.  Before I tossed things, I looked to see how long refrigerated food is safe to eat when the power goes out, and learned it’s usually four hours.  It’s worth noting that full refrigerators stay colder longer than emptier ones.

The important food to throw out is perishable food like meat, fish, cut fruits and vegetables, eggs, milk, cheese (soft shredded, low fat) and leftovers.

Food that is okay to keep includes hard cheese, butter and margarine, condiments, bread, raw vegetables, and fresh whole fruit.

ONE CUP TIP

Here’s a hack to be able to tell if your food is safe to eat.  But, of course, if you’re uncertain, it’s better to be on the safe side and throw it out.

You put a cup of water in your freezer. Freeze it solid and then put a quarter on top of it and leave it in your freezer.  If the quarter falls to the bottom of the cup that means all the food defrosted and you should throw it out.

If the quarter is either on the top or in the middle of the cup, then your food may still be ok. 

After eating Ramen Noodles, peanut butter and jelly sandwiches, and tons of cookies, I was happy to be able to get a load of healthy groceries delivered from Walmart, using my Walmart+ .

As soon as we had word that the power was here to stay, I opened my Walmart+ app and was able to fill up my cart!

After you place your order online, you can choose a delivery date and time that’s convenient for you.  If they happen to be out of something, they’ll notify you and give you the option to substitute with something else.  I’ve been SO happy with this service, especially in time like this when you need groceries fast, but don’t want to drag your kids to the store with you!

I so appreciate the delivery drivers who work hard to bring us our food and with the Walmart+ app, you can leave a tip without coming in contact with the driver.  They will leave your groceries at your door and notify you when they have arrived, so the whole process is contact-free.

TEX MEX BURRITO BOWL

This Tex Mex bowl is one of my favorite things to eat and you can easily customize it with different toppings and add chicken, steak or fish for more protein.  It’s basically a burrito in a bowl and so easy to make because they only thing you have to cook is the rice and then you prepare fresh pico.  The corn was from a frozen bag and the beans were canned.

Cook the rice according to package directions.  For added flavor, add cilantro and Everything Seasoning.

To make the pico, chop tomatoes , red onion, jalepeno peppers, cilantro and the juice of one lime.

I kept the ingredients separate so you could see them and also because my daughter doesn’t prefer the pico and she can mix and match how she likes.

When you’re ready to eat, just toss in everything but the pico and heat it in the microwave for about 1.5 – 2 minutes. Then, add pico or sour cream.  This is also delicious with a side of tortilla chips.  The fresh pico really makes it delicious!

SAVORY BREAKFAST

If you follow me on Stories, you’ve seen me enjoying this savory breakfast instead of my typical protein pancake or oatmeal.  I’m loving how good it tastes and it’s nice and filling!

I cook one egg and 1/2 cup of All Whites in a skillet over medium heat and season with salt and pepper.

Meanwhile, in a separate pan, I add the sausage links, mushrooms and asparagus.  Add about a tablespoon of water and cover the pan with a lid and let the ingredients cook for about 4 minutes.

Everything is cooked in less than five minutes and it’s so yummy!  It’s also delicious with a side of toast.

 

Are you a breakfast person? I know some people do intermittent fasting, but I really don’t think I ever could, I feel like I need something in my stomach in the morning, especially if I’m going to exercise.

  3. Love your blog but please please buy some reusable bags. that plastic ends up in landfills and is dangerous to sea creatures and birds. Ikea has some cute ones but you can buy them anywhere.

    1. Hi Melissa, this was a grocery delivery so I couldn’t use my reusable bags here. I reuse the plastic bags that come with the delivery and also request for produce not to be bagged into additional plastic bags. I appreciate your heart for the environment!

    I’m 46 and am a big Intermittent Fasting fan. It has helped me keep to the same weight in college and battle the middle age spread……it sounds tougher than it really is. I skip breakfast, fast clean with drinking only black tea or coffee and open my window to eat at lunch and have an early supper at 5:00….. so have a 19:5 fasting schedule. I work out hard first thing in the morning and have no problems at all exercising on empty stomach. I think I burn more fat that way. The hunger comes and goes in waves. I sip some water or tea or coffee and am fine. Not preaching at ya. Just saying if I can do it, anyone can. I struggle with a 1500 cal diet or counting calories so this works for me personally. But to each his or her own.

  5. I love the contactless grocery delivery options. I like to order off Whole Foods (via Amazon) and it has been a saving grace since covid. I so appreciate all of the workers who make that possible. And that breakfast looks delicious!!
