Fresh & Quick Summer Dinner

Summer is in full swing here.  Hot days, flip flops, pool time, and quick dinners cooked outside on the grill.  This meal is one of my favorite summertime suppers and is so easy to pull together.  Fresh corn is begging to come home with me from the grocery store and I can’t get enough of it.  Tomato and avocado salad is a year-round favorite, and so colorful with this dish. And finally, a marinated skinless, boneless chicken breast is grilled to juicy perfection. 
Marinade (Finger Lickin’ Chicken Marinade from Food.com)
-for 4-6 chicken breasts
  • 1 cup oil
  • 1/2 cup vinegar
  • 2 tablespoons Miracle Whip Light
  • 3 tablespoons Worcestershire
  • 2 tablespoons lemon juice
  • salt and pepper to taste
  • 2 tablespoons thyme
  • 1 tablespoon garlic salt

Mix all the ingredients together and marinate for at least 30 minutes and up to overnight in the refrigerator.  Grill the chicken for about 8 minutes on each side, depending on the size of the chicken.  
This marinade makes for delicious chicken friends, really moist and flavorful. 
Tomato & Avocado Salad
  • Tomato (4)
  • Avocado (3)
  • Red onion (1/3 cup) 
  • Light ranch salad dressing (couple tablespoons)
  • Tony Chachere salt-free seasoning (to taste)
Dice the tomato, avocado, and red onion and toss together with the dressing and seasoning.
Corn-on-the-Cob
  • Shuck the corn and boil for about 8 minutes.

  1. That looks delicious!! I'll have to try the salad. It sounds so good especiallly on these crazy hot days we're having in Baton Rouge. (I'm sure y'all are having them in Houston as well).

  2. Everything on that plates looks so good. I love barbecued and grilled food. Food cooked on BBQ just tastes of summer. I love the how crunchy the outside of chicken goes on a BBQ or grill pan. Have you ever cooked a corn on the cob on the BBQ? So good.

  3. I do a similar Greek chicken marinade. It's almost the same, just drop the Worcestershire, and in place of the Miracle Whip use Greek Yogurt if you want to go Mediterranean! Also very healthy and low sodium!

  4. Hi Megan! The tomato avocado salad looks so good! Definietly have to make it this weekend! I don't eat meat but my husband does eat poultry and fish, I am sure he will like this chicken. Thanks for sharing!

    Oh – I also LOVE the oatmeal you posted a couple months ago. I put mine in a canister like you did so it sits right on my counter, it reminds me to get 2 scoops and take it to work for breakfast. It had never occurred to me to make my own.

  6. Oh yum, that looks great! We just got my parent's old fancy grill…and I can't get it to flame up, so our chicken doesn't get that good crisp?!?
