Baked Kale Chips

I jumped on the kale bandwagon and made kale chips as one of the sides to our dinner on Saturday night.  Somewhat to my surprise, I REALLY liked them- and so did everyone at my table.  I’ll definitely be making them again because they are so quick and simple and full of vitamins K, A, and C as well as magnesium and fiber.

I bought one bunch of kale ($1.39 at my store) which made about 2 servings.  

I rinsed and dried the kale, then cut the stems off and tore the leafy part into 2-3 inch pieces.  Simply toss the kale with a tiny bit of extra virgin olive oil (next time I’ll spray the olive oil) and salt and spread in an even layer on a baking sheet.

I cooked it at 350 degrees for about 10 minutes, tossing a couple times.  For even drier, crispier chips, cook at 300 for about 30 minutes.

The kale cooks way down and ended up like this.

It is delicious!  I’m hooked and wish I would’ve tried it sooner.  We were literally fighting over the kale chips. They taste kinda like roasted brussel sprouts, but the thin crunchy kale is even better.

  1. I dont like kale but a friend convinced me to make these kale chips and they were surprisingly tasty! I will say though if you dont like the taste of kale then remove the entire middle stem – the leafy part gets crunchy but the stem stays soft and tastes horrible to me. Also I know olive oil is good for you but I make them with just a little salt – they are still slightly wet from being washed so its holds the salt well w/o the added oil.

  2. I love kale chips…even got hubby to try them!! They are so easy to make, but Whole Foods also carries a brand with "hot" flavoring that is really good too. My girlfriend makes an awesome Kale salad (has brussel sprouts in it too, and most have no clue!) Happy to share it if you'd like.

  3. My kids love these things. I cook them the same way but have no stem and use the Misto to spray olive oil. My kids like to help tearing the pieces as well.

  4. I have tried them and they are suprisingly crunchy and tasty and like junk food! Mine, however, so not look as pretty as yours do. Mine look burned!
