Quick Morning Oatmeal

Busy mornings are typical in most families and ours is no exception.  I’m a coffee-first-thing-in-the-morning kind of gal, but I also never go without breakfast.  A super quick and healthy breakfast is oatmeal.  Some mornings go so fast, I put my oatmeal in a cup and eat it in the car- shhhh!

My oatmeal is simple, just oats, sliced almonds, raisins, cinnamon, and topped with a little skim milk.
I toast the almonds in a dry skillet over medium heat for a few minutes to make them more flavorful and crunchy.  Watch them closely though- they can burn easily. 
Then I combine all the ingredients in a large canister and give it a good shake.
I keep a plastic scoop in the canister for easy scooping. 
And the whole mixture sits on the counter next to my coffee. 
You can also portion the dry oatmeal mix into 5 small plastic baggies and take them to work to eat in the office in the morning if you don’t want to eat in the car! 
I add water, microwave for one minute, then add a little milk.
What’s your quick go-to breakfast?  I also like toast and natural peanut butter.

  2. I never thought to make a jar of the mix-ins…great idea! I too love oatmeal, same way as you and also with banana and a little honey. My go to however is vanilla lactose free yogurt topped with mixed fresh berries and a little granola.

  3. Oatmeal is my go-to. So delish and filling. I like mine with cranberries or fresh blueberries. I'm so happy that Starbucks now offers Steel cut oats and blueberries with agave. I keep it at work too. Now I'm hungry. Thanks. 🙂

  4. Thanks. I like this idea. Never thought of mixing it all together before heating it. That will save some time! And fyi, every time I see that Tex Mex to go picture on the side, I want to make those so bad. I keep forgetting!

  5. I eat oatmeal nearly every day. I have been making a big batch of steel cut oats on Sunday nights, saving in one cup portions (inspired by your lunches, thanks!) and then just heating it up in the mornings with a little almond milk. I add some fresh fruit, almonds, and a dash of cinnamon, stir it up, and have a hot breakfast in minutes.

  6. I tried a version of this today and I made a mess! I just made a bowl of oats and put in microwave but I need a little practice…. oatmeal bubbled over in microwave. I threw in fresh blueberries and Walnuts and ate in car. I am going to try your exact instructions soon!

  7. I am an oatmeal girl too. I add blueberries, honey, cinnamon and flax meal to mine, but I love your combo as well! Great idea to pre-mix it all together, plus it looks pretty in the canister in your kitchen! Love the new blog! I will have to visit often because I am always on a quest for good health and wellness.

    And also, for those asking about the canisters…I have identical ones with silver lids that I got at Walmart for about $6 each. Could easily spray paint the lids flat black. 🙂

  10. I prefer the taste and texture of steel-cut oats, but they take a long time to cook, so I pre-cook in water with cinnamon, vanilla, and raisins. Then, in the morning, I just scoop out a bit and re-heat with a little milk in the microwave.

  11. I think I'd like to try your mix, it sounds yummy.
    I will eat a whole grain toast with almond butter and a bit of raw honey or my own oatmeal mix.
    I will cook up a large batch of my oatmeal mix then split it into containers to be alternated with the toast option. I cook steel cut oats and a bit of unprocessed bran and flax powder in water and low fat or skim milk. Cooking the oats with the milk instead of simply adding at the end makes it seem much richer than it actually is. After this about half done, I add rolled oats, cinnamon and a bit of amber agave nectar. The amber agave nectar tastes like maple syrup and just a bit satisfies my sweet tooth while maintaining a low glycemic index. Afterward I split into containers and top with sliced almonds. When I pull a container I will add fresh blueberries or a chunky organic unsweetened applesauce. It's equally good hot or cold. I'm sure a protein powder could be added if you choose, but I haven't tried that yet.
