Easter Cookies & Decor

Yay for Easter week, a favorite time of year.  Spring is in the air and summer isn’t far away.  The days are lighter longer and we prepare to celebrate The Resurrection.  Our church always has a great service and I’m looking forward to it and a nice brunch after.  We know Easter isn’t really about bunnies and eggs, but it doesn’t hurt to be playful with those things!

I found the cutest sugar cookies for my son’s class Easter party at Whole Foods.  I hope the kids like them- but I think they will since he already tasted and approved.

Workout Binder (Workouts Post 12-Week Program)

Now that I’ve completed the Jamie Eason 12-Week Training Program, I needed to figure out what to do next.  The last couple of weeks I slacked off on my workouts, so time to get back to it!  I want to continue the strength training (especially on my legs/glutes) and picked a few of my favorite workouts from the Jamie Eason program and will continue to do those to build muscle.  I think they are all from Week 7 of the program.  I’m also looking forward to trying the spin classes at my gym, and now that the weather is warming up here,

Organizing the Kid Books

It feels like we’ve got kid books (and toys) everywhere these days.  I want the books especially to be easily accessible so that we can quickly find a book at bedtime or whenever my son wants to read.  We’ve previously kept the books in bins and baskets throughout the house, but the basket situation is getting out of control.  I wanted to get the books (and baskets) off of the floor to create more room to play.

I was considering buying a bookshelf for my son’s room, then thought, duh, just make room for his books on a shelf in our hallway.

Healthy Granola Bites

Hi, lovely readers!  It’s Jennifer from The Chronicles of Home and I’ve got another healthy little treat for you today.  I started making these granola bites a few weeks ago as a way to satisfy my daughters’ late afternoon snack attack without ruining their appetites for dinner.  And I’d be lying if I said I didn’t dip my hand into the bowl a lot of days, myself!  

They taste like a cross between granola and cookie dough and my girls would probably put down the entire batch of them if I didn’t limit them to 2 or 3 at a time.

Can you believe Easter is almost here?  It feels like it snuck up on me really quickly this year, but I’m ready with a simple Easter table for four.  I mostly shopped our home with items purchased from past years to create a setting that is relaxed and casual.

The inspiration for the table started with these adorable miniature birds nested with speckled eggs.  They are just a couple dollars at Hobby Lobby and I like how they add that Spring nature feel. 

The floral runner was purchased at World Market a few years back and used in a previous Thanksgiving table.

Mediterranean Chickpea Salad

Are you in the mood for a hearty salad?  I found this mediterranean chickpea salad recipe in Barefoot Contessa’s latest cookbook, Foolproof and enjoyed it all last week!  It’s healthy, delicious, colorful, and very fast to assemble.

Dice a couple of tomatoes, a cucumber, scallions, and add some chopped basil.

Drain and rinse a can of chickpeas.

For the dressing, you add lemon juice, garlic, salt, pepper and olive oil and whisk to combine. 

Toss it all together. 

Then add feta cheese.

I wanted to take a minute here to thank you all so much for reading and supporting my health and fitness blog, Honey We’re Healthy.  I’m proud of the content I’ve built up with the help of my friend and food contributor, Jennifer of The Chronicles of Home.  Lately, I’ve been sharing some of the meals we eat around here (which are quick and simple to make since I’m no gourmet chef).  And like many of you, I’m a busy mom without a lot of time to create elaborate dishes on the weekdays.  Weekend meal planning has been a life saver!

Step One Toward a Big Boy Room

I recently mentioned that my son’s room still looks more like a nursery than a toddler room, even though he just turned three.  Over the weekend, we took the first step toward a big boy room- removing the changing table part from his dresser.  It came right off, I just had to use a wood pen to paint over some surface scratches.

And now it looks much more like a dresser!

For now, I’ve accessorized it with a large textured raffia tray from West Elm, some books, a Target lamp,

Quick Morning Oatmeal

Busy mornings are typical in most families and ours is no exception.  I’m a coffee-first-thing-in-the-morning kind of gal, but I also never go without breakfast.  A super quick and healthy breakfast is oatmeal.  Some mornings go so fast, I put my oatmeal in a cup and eat it in the car- shhhh!

My oatmeal is simple, just oats, sliced almonds, raisins, cinnamon, and topped with a little skim milk.

I toast the almonds in a dry skillet over medium heat for a few minutes to make them more flavorful and crunchy.  Watch them closely though- they can burn easily.

My Home Office Organization

My Home Office Organization

With legal work, blogging, and Stella & Dot, I’ve been spending many hours in my home office lately.  Thankfully, I truly enjoy being in this space and get a lot accomplished here.  It’s way more fun to work in an office that is clean, pretty, and organized.  I feel much better here ever since I painted the walls white (they used to be light yellow) and turned my desk to face the window.  Those two small changes made a world of difference.  I also found dark grey velvet drapes that feel luxurious in the room.

Pink Lamps

I admit to having a “thing” for lamps.  Am I alone?  I know lots of women who love shoes and bags (me too!), but I also get excited over pretty lamps (and mirrors).  You can find inexpensive lamps at places like Home Goods, so they’re easy to switch out when you crave a quick change to a room.

I’d been coveting a girlie, bright pink lamp for some time, but didn’t want to spend a fortune.  Lamps Plus has a cool line of lamps from every color of the rainbow (with cute coordinating shades) for around $100 and up,

Happy Monday :)

Hi guys!  Just popping in to say Happy Monday!  Hope you all had a fantastic weekend:)  Did you do anything fun? We celebrated my favorite little guy’s birthday and the celebration continues today with his classroom full of sweethearts.

Jamie Eason Live Fit 12-Week Trainer Completed (My 12 Week Recap)

Okay guys, I finally finished the Live Fit 12 Week Trainer and got a pic snapped!  The picture on the left is me at Week 2 and the picture on the right is a few weeks after I completed week 12.  The changes may appear subtle, but I can say I feel more toned and tighter overall, especially in my shoulders, abs, and legs.  There were many times during the program where I felt like “this is hard!” but I didn’t ever want to give up because I knew the results would be worth it.  I also came to crave the workouts because they are such a big stress reliever in my life.

This Weekend . . .

Hope you all have a great weekend!  We’ll be celebrating our son’s 3rd birthday with a Mickey Mouse party (his idea) and lots of friends and family:)  He’s sweeter everyday and I know this year is going to be extra special.  How fun is 3?!
