Tex Mex To Go

Y’all know that I couldn’t make it through the week without preparing and portioning out meals for the week.  This is especially true for my lunch since I typically eat at the office.  One of my “go-to” meals is a Tex Mex dish that I shared recently on Instagram.

A few people asked for the full recipe so here you go.  I feel kinda bad because this isn’t really a “recipe” – it’s more of an assembly.  This recipe makes 10 small meals for me. 
Ingredients
  • 2 packages Jennie O Extra Lean Ground Turkey
  • 1 large can of fat free refried beans
  • 2 packages Taco Bell low sodium seasoning
  • Low fat shredded cheese
  • Low fat or fat free sour cream
  • Pickled jalapeños 
Directions
Brown the meat, then add the seasoning packages and water according to package directions.
I portion out the meat into 10 small containers, add a scoop of beans, sour cream, cheese and a few jalapenos.  I microwave it for about a minute and a half.  I also like this as a salad on top of shredded lettuce.

  1. I have to tell you that I love these pre-done lunch ideas. I've been eating the chicken/rice/zucchini combo for several weeks and find it is so easy and delicious. I'll be sure to try this one, too. Thanks for the sharing your good ideas.

  2. This is a great idea! This is too much for me to make at once but these are ingredients we always have on hand. I can portion out the meat, then freeze the extra!

  4. Does the sour cream get… weird.. when you microwave it? I've never microwaved it, but I just always assumed it was gross. I love the idea of this, I always crave Mexican food at lunch time 🙂

  5. I love mexican food,,,,,,,sounds yum but one problem. I am vegetarian. When I eat salad, i get hungry after an hour:( Can you tell me more vegetarian(no eggs or meat) to go food?

    1. Try TV (textured vegetable protein-what is left of the soybean after oil is removed). Takes on the flavor of what ever it is cooked in and retains structure, ie not mushy.

  6. Hey! This has become my favorite lunch to make, and always have enough to freeze some meat for a couple weeks down the road. So I know that I'm getting the nutrition right, are you using the 1lb packs of turkey to make this?
