Chocolate Protein Brownies

I made these “brownies” over the weekend for the first time, and could not believe how good they are!  The consistency is actually more like a cake, but you don’t have to feel guilty about eating this cake.  The recipe comes from Jamie Eason and I put in italics how I tweaked it.  I think the next time I bake them I’ll leave out the sugar and see how that tastes. (*update, I left out the sugar completely and added a 1/4 – 1/2 cup of dark chocolate chips and it’s even better!)

Ingredients
  • 1 cup Oat Flour (I ground oats finely in a food processor)
  • 2 scoops Vanilla Whey Protein Powder (I used chocolate protein powder)
  • ½ tsp Baking Soda
  • ¼ tsp Salt
  • 3 tbsp Baking Cocoa 
  • 4 Egg Whites
  • ½ cup Splenda (I used 1/4 cup real sugar)
  • 8oz Berry flavored Baby Food (I used 8oz applesauce)
  • 4oz Water
Directions

  • Preheat oven to 350 degrees.
  • Mix dry ingredients (oat flour, vanilla whey protein, baking soda, salt, baking cocoa) together in a large bowl.
  • Mix wet ingredients (egg whites, Splenda, berry flavored baby food, water) together in a medium sized bowl.
  • Add wet ingredients to dry ingredients and mix together.
  • Spray cooking dish (I used an 8×8 glass pan) with a non stick butter spray or olive oil spray and add batter to dish.
  • Bake for 20-30 minutes (mine cooked for closer to 30 minutes)

    Nutritional info using her ingredients: 155 calories **; 12 g protein; 16.5g carb; 4.5g fiber; 1.75g fat Stellar stats.

    Ingredients:

    * 2 Egg whites (**If using liquid egg whites use 1/2 cup and add 20 calories)
    * 1/4 cup pumpkin (3 T applesauce works well too!)
    * 2 T coconut flour* (1 T also works, and results in 40 fewer calories)
    * 1/2 tsp baking powder
    * stevia or other granular sweetener to taste
    * 1 T. cocoa powder (Hershey's Special dark cocoa is best!)

    1. Mix ingredients well with fork, whisk or spatula
    2. Microwave for 2:30-4+ min on High (depends on your microwave, altitude and the whim of the cupcake gods.)

  3. Thanks for the recipe! I love to bake (and eat what I bake haha) so these sound wonderful!

    Also, I'm wondering if you are planning to post about what your daily eating plan looks like. I know you are weight training a lot and I'm curious what you generally eat. I work out about 60-90 minutes a day and I am hungry A LOT so I'm wondering what you eat to keep up with your training.

  5. Yum! These look fantastic! I'm curious though, is it safe to give toddlers foods that are high-protein via protein powder? My mom always added powdered skim milk to her baking to boost the protein, so i'm sure it's fine. I was just curious if there was anything i should be aware of as far as any of the other ingredients in the protein powder.

    1. Great question! I've read that in moderation it shouldn't hurt them. My son doesn't really eat protein powder so I hadn't given it much thought. I'm sure a through google search could give you more insight than I can and a brief discussion with a pediatrician.
